General Ingredients
- Chickpeas flour: 2 cup
- Water: 1-1/2 cup
- Green Chili: 1 chopped (optional)
- Onion: 1 medium (finely chopped)
- Corn: 1/2 cup (boiled)
- Green Peas: 1/2 cup
- Carrots: 1/2 cup (finely chopped)
- Spinach: 1/2 cup (finely chopped)
- Cilantro: 1 handful (finely chopped);
- Vegetable Oil: for frying
Spices
- Cumin Seeds: 1 tsp
- Turmeric Powder: 1 tsp
- Garam Masala: 1 tsp
- Red Chilli Powder: 1/2 tsp
- Baking Powder: 1/4 tsp
- Salt (to taste)
Green Cilantro Sauce
- Cilantro: a handful
- Green Chili: 2-3
- Mint Leaves: a handful
- Tamarind Pulp: 3 tsp
- Salt (to taste)
- Lemon Juice: 1 tsp
Cooking Steps
Steps: In a large pan, add chickpeas flour, salt, turmeric powder, red chili powder and garam masala. Add water and make a lump-free batter. Batter consistency should be medium to thin (like dosa batter), if needed add little extra water
Add finely chopped onion, cilantro, green chili, carrots, corn, spinach, and green peas.
Heat a griddle / flat frying pan and add few drops of oil. Take a big spoon of batter and spread it on the pan and make a thin pancake. spread oil and fry till golden brown.
Green Cilantro Sauce
In a grinder, add cilantro, mint leaves, chilies, and tamarind pulp and make a smooth paste. Remove from the grinder and add salt and lemon juice and mix well.
Serve the pancakes with green cilantro sauce.
